Best Home Made Chicken Burgers

Serves 9 burgers


  • 2 chicken breasts
  • ½ cup tomato sauce
  • 1 cup breadcrumbs
  • 2/3 cup flour
  • Italian herbs
  • Oil
  • Breadrolls


Preheat oven 180 degrees.  Remove fat and sinew from chicken.  Slice each chicken breast horizontally through the thickest end and cut into portion size pieces.  Coat the chicken with tomato sauce.  Into a large bowl or snap lock bag mix breadcrumbs, flour and herbs.  Roll each piece of chicken in crumb mix pressing firmly to ensure adhesion.  Coat well.  This is a little time consuming but well worth it.  Once all pieces are completely coated spread onto a dinner plate and place in freezer for 15 minutes.  This allows the crumbs to harden slightly and eliminates the coating falling off during cooking.  Heat oil in frying pan to Med –High and begin to cook chicken pieces.  Allow room for chicken to expand, be careful not to overload the pan.  This may take several batches.   Once pieces are cooked place in preheated oven while the breadrolls are buttered, lettuce shredded and mayo squeezed on.   Ready to eat within 1 hour.
